Roast Garlic, Sausage & Butterbean Bake with Herby Crust
The perfect comfort food meal - Sausages with roast garlic and butterbeans in a rich tomato sauce, topped with herby breadcrumbs & parmesan
For the slow cooker method - Brown sausages then place in the slow cooker with red onions, red wine vinegar, chopped tomatoes, sugar, water and Puréety sausage casserole seasoning. Mix well and cook for 2 hours on high or 4 hours on low. Then roast the garlic as per recipe, mix through the sauce when its cooked. Then bake with the crumb as per recipe.
Cooking Method
- Pre heat the oven to 220c gas mark 7 200 fan oven
- Take the top off the bulb of garlic and place in some tin foil with a splash of olive oil and a sprinkle of sea salt. Scrunch the foil at the top and place at the bottom of the oven for 20-30 minutes or until the garlic is soft and roasted
- In a pan or casserole dish, cook the sausages in a little oil until browned on all sides and set a-side
- In the same pan, cook the onions on a medium heat until soft
- Add the vinegar, chopped tomatoes, water, sugar, and Puréety Sausage Casserole seasoning and stir well before bringing to a simmer
- Squeeze out the garlic from the roasted bulb and mix into the the pan. Add the butter beans and cherry tomatoes and simmer for 10-15 minutes then add the sausages
- Combine the breadcrumbs, parsley and parmesan (either blend or mix in a bowl). Then transfer the sausage casserole into a dish or oven proof tray and top with the herby crust, allowing some of the sausages to stick out slightly
- Bake for 10-15 minutes or until crispy - serve and enjoy!

- 8-12 Good Quality Pork Sausages
- 2 Red Onion , Sliced
- 2tbsp Red Wine Vinegar
- 400g Tinned Chopped Tomatoes
- 400g Tinned Butterbeans
- 100g Cherry Tomatoes , Quartered
- 50g Fresh Breadcrumbs
- 40g Parmesan , Grated
- 1tbsp Sugar (Optional)
- 300ml Water
- 15g Parsley
- 1 Bulb Garlic
- 1tbsp Olive Oil
