Cooking Method

Start by weighing out 1kg of new potatoes and getting them into a pan of salted water and bringing that to a boil.
While your potatoes are boiling, add your Garlic & Butter glaze and 100ml of oil into a bowl and mix well.
Once your potatoes are soft, preferably you are able to push a knife through the middle of the biggest spud without any resistance. Add them to a tray with grease proof paper and organise them into rows, allowing space for them to spread out once crushed.
Once you have organised your potatoes, get a tall glass or something similar and crushed each potato as thick or as thin as you like.
Now you can brush your Garlic butter and oil mixture generously onto your crushed potatoes and place into a pre heated oven at 180° c for 40 minutes to 1 hour.
Once they are cooked to your desired crispiness and texture take them out the oven to cool slightly and add some chopped herbs of your choice, we used parsley.
Serve on a plate with your favourite dip, we recommend a sour cream and chive dip and enjoy!
