Sea Salt and Malt Vinegar Potato Seasoning

For gluten free version use gluten free flour, After blanching fluff up the chips for extra crispy exterior , Serve with mushy peas, This recipe would work with cod or any other fish alternative

Cooking Method

Pre-heat the oven 200c
Cut the potatoes into chunky chips.
Add the chips into a pan and fill with water, add salt and bring to the boil, simmer for 4-5 minutes and drain.
Heat the oil in a large tray or two smaller trays in the preheated oven
Once drained ruffle the chips in a bowl or pan then sprinkle the Pureety Salt & Vinegar seasoning on and toss until evenly distributed.
Add the seasoned chips to the hot oil, be careful not to splash the hot oil. Cook for 35-45 mins or when they are crispy turning half way through.
Mix the dry ingredients in a bowl, before adding the beer and white wine vinegar and salt. Whisk until smooth then rest in the fridge for 30mins.
When the chips are almost done, coat the fish in some extra plain flour before submerging in the batter mixture, and frying in hot oil (180c) for 3-4 mins on each side or until golden brown and above 73c on the inside.
Finish with lemon wedges and sauce of your choice.
