Prepare to indulge in a tantalising twist on a potato salad with our mouthwatering "Dirty Potato Salad." This dish combines the rustic charm of rosemary and garlic-infused potatoes with the freshness of spring onions and chives, all brought together by a zesty French dressing, and crowned with irresistibly crunchy bacon lardons. Perfect for picnics, barbecues, or as a side dish for any meal, this recipe promises a flavour packed experience that will leave your taste buds craving for more.

Pre heat your oil in a tray for the crispiest possible potatoes

Cooking Method

Slice Spring onions and chives
Roughly dice the potatoes, and place in a pan with same salted water and bring to a boil. Once boiling, simmer for 5-7 minutes.
Drain the potatoes and allow to steam dry, then toss to ruffle edges. Then add the pureety Rosemary & Garlic seasoning.
Heat oil in an oven at 200c then add the seasoned potatoes to the hot oil (Be careful not to splash your self) Add a little more oil if needed then carefully toss the spuds with a lifter / spatula.
Cook for 30 mins before turning and continuing to cook for 15-20 minutes or until golden brown and crispy on all sides.
While the potatoes are cooking. In a large frying pan add a little oil then heat the pan to a high heat and add the smoked bacon Lardons. Turn the pan to a medium heat and crisp up the lardons while while the potatoes cook. When its ready set to one side.
In the small mixing bowl make the dressing. Whisk together Mayonaise, honey, wholegrain mustard and American mustard.
Once the potatoes are crispy serve in a clean dish, then top with the crispy bacon lardons, spring onions, dressing and chopped chives.
