Thai Green Turkey Leftovers Curry
A tasty recipe to use up that leftover Turkey - with notes of ginger and coriander in a creamy coconut curry sauce, this tasty dish is ready in minutes perfect for a quick lunch or dinner
This recipe will also work with leftover chicken as well. If you have any leftover green vegetables then slice up and add with the coriander
Cooking Method
- In a heavy bottomed pan, heat up the olive oil and then soften the diced onion
- Add the tin of coconut milk and water before bringing to the boil and adding the Puréety Thai Green Curry recipe seasoning
- Add the turkey and simmer for 5 minutes
- Add the vegetables and simmer for another 3 minutes
- Add the chopped coriander and lime juice, then serve!

- 450g Cooked Turkey , Shredded
- 120g White Onion , Diced
- 400ml Coconut Milk
- 100ml Water
- 240g Green Vegetables
- 15g Coriander , Chopped
- 1 Lime , Juiced
