Moroccan Style Coconut, Beef and Sweet Potato Curry
Succulent pieces of beef shin slow cooked in a Thai spiced coconut & lime sauce, served with with chunky, soft sweet potato, and fresh coriander
Add some extra chilli flakes to increase the spice level. You can use standard diced beef instead of beef shin, the shin has a different texture.
Cooking Method
- Heat up a large frying pan and add the coconut oil and the beef and cook until brown
- Add the onions and soften
- Add the tomato puree and cook out for 2 minutes
- Next add coconut milk and water mixed with Pureety Tagine seasoning
- Now transfer into the slow cooker for 3-4 hours on high or 5-6 hours on low
- Add the sweet potato and cook for another 1 hour on high or 2 hours on low or until the sweet potato and beef are soft
- Stir in the lime juice, honey and coriander
- Serve with rice, hummus, & flatbreads

- 1ml Red Onion , Diced
- 500g Beef Shin , Diced
- 350g Sweet Potato , Diced
- 1tbsp Tomato Puree
- 400ml Coconut Milk
- 200ml Water
- 20g Coriander , Chopped
- 1ml Lime , Juiced
- 2tbsp Coconut Oil
- 1tbsp Honey
