Yoda’s Beef Stew
May the 4th be with you! A beef stew inspired by Yoda's favourite meal including diced beef, chunky carrot & onion
You can do a vegan version of this stew by replacing the meat with a tin of white beans or chickpeas
Cooking Method
- Turn the Instant Pot to Sauté, add coconut oil and melt
- When the coconut oil is hot, add the diced beef and cook until brown on all sides
- Add carrots and onions, stir and soften for 4-5 minutes
- Add the water, mix well and seal the lid on the instant pot and set to pressure cook
- When the pressure cook is finished, release the steam and take off the lid before adding the coconut cream. Then turn the Instant Pot to Sauté again, and bring to a simmer. Stir through the Puréety Moroccan Tagine seasoning
- Add the sliced mushrooms, chilli, spinach & parsley - Serve and enjoy!

- 500g Beef , Diced
- 150g White Onion , Diced - chunky
- 1 Red Chilli , Diced - finely
- 100g Baby Leaf Spinach
- 300ml Water
- 250ml Coconut Cream
- 2tbsp Coconut Oil
- 150g Carrots , Diced - chunky
- 250g Chestnut Mushrooms , Sliced
- 10g Parsley
