Cheesy Oven Baked Sausage Burritos
Sausage meat in a Mexican salsa based sauce with parmesan cheese and Puréety Fajita seasoning - wrapped in tortillas, topped with mozzarella cheese and baked until crispy... comfort food perfection!
If you cant get sausage meat, just buy 400g of sausages and squeeze the meat out of the casing. Serve with Puréety wedges, salsa and sour cream. You can build the burritos in advance and keep covered in the fridge then bake later. This recipe would also work with a plant based sausage or black beans instead.
Cooking Method
- Pre-heat the oven 200c - gas 7 - 180c
- Add some oil to a hot pan and cook the sausage meat, breaking it up as you go. Cook until the meat is starting to brown
- Add the onions and soften before adding the peppers and the Puréety Fajita seasoning. Cook for a further 2 minutes, stirring continually
- Add the kidney beans, water and salsa. Mix well and then simmer for 10-20 minutes, adding a little more water if needed
- Finish the burrito mix with the grated parmesan and chopped coriander
- Split the mixture over the tortillas and roll them tightly. Place the burritos into an oven proof dish and top with mozzarella cheese
- Bake the burritos in the preheated oven for 10-15 mins or until the cheese is melted and the burritos are crispy - serve and enjoy!

- 400g Sausage Meat
- 1 Green Pepper , Diced
- 1 Red Onion , Diced - chunky
- 200g Salsa (Shop bought or Homemade)
- 4 Large Tortilla Wraps
- 50g Parmesan Cheese , Grated
- 120g Mozzarella Cheese , Grated
- 100ml Water
- 2 Spring Onions , Sliced - finely
- 10g Coriander , Chopped
