Cheesy Gnocchi, Tomato & Basil Bake
Flavour filled and warming dish - Italian Gnocchi in a rich tomato & basil sauce with diced peppers and topped with grated mozzarella & breadcrumbs
You could add some chorizo or bacon to this dish to add a meaty element. Serve with salad and garlic bread. The approximate cost for this dish is £1.10 per portion
Cooking Method
- Pre-heat the oven to 190c gas 5 170c fan oven
- Heat up a large deep sided pan with the olive oil. Add the onions and soften before adding the garlic and peppers, then continue to fry for another 2 minutes on a medium heat
- Add the chopped tomatoes and bring to the boil, then add the Puréety Bolognese seasoning and leave to simmer for around 20 minutes (stirring every so often). You may need to add a splash of water if the sauce becomes too thick
- Add the basil
- In a separate saucepan, bring a pan of salted water to the boil, add the Gnocchi and give it a little stir to ensure the Gnocchi doesn't stick to the bottom
- Reduce the pan to a simmer and cook for 2-4 minutes until the gnocchi floats to the surface of the water before draining
- Combine the gnocchi and tomato sauce, tear the mozzerella into smaller pieces and mix well before transferring into an ovenproof dish
- Mix cheese and breadcrumbs in a bowl and top the oven proof dish with the crumb
- Place in the oven for 10-15 minutes until the cheese is melted and bubbling and the breadcrumbs are golden brown - serve and enjoy!

- 2 Garlic , Cloves - grated
- 800g Chopped Tomatoes
- 500g Gnocchi
- 100g Mozzarella Cheese , Grated
- 5tbsp Panko Breadcrumb
- 1 Green Pepper , Diced - chunky
- 10g Basil , Chopped
