Chicken breast marinated in yoghurt & Puréety Thai Green Curry seasoning, served with pickled cucumber ribbons, red onion and carrot finished with crushed peanuts, fresh chilli, spring onion & coriander
Serve with lime wedges, crushed peanuts & baby leaf spinach
In a bowl or tray combine the chicken with the lime juice, yoghurt chopped coriander & Puréety Thai Green Curry Seasoning. Allow to marinade in the fridge for at least 30 minutes or overnight
Mix together the ingredients for the pickle liquor, then pour over the carrot, cucumbers & onions. Cover and store in air tight container for at least 30 mins or they will keep for a couple of days in the fridge. You can drain and re-use the pickle liquor again
When the chicken is marinated, cook on a medium heat for 6-10 minutes on the BBQ or grill, until cooked through turning halfway through. Ensuring the chicken is cooked thoroughly
Serve the chicken burgers on top of toasted burger buns with the pickled vegetables & sweet chilli sauce
