Gluten Free Mediterranean Sausage Casserole
Sausages, red onion, peppers & sweet potatoes cooked in a rich tomato based sauce with fennel & fresh herbs
Try using a flavoured sausage for a twist on the dish. Substitute some of the water for a red wine for a richer sauce. Costs at approximately £2.45 per portion
Cooking Method
- Preheat your oven to 170c gas 3 150c fan oven
- Fry the sausages with a splash of oil in a non stick frying pan until well browned, then set a-side
- Sauté the diced red onion and fennel in a casserole dish until soft but not browned
- Add the diced sweet potato, tinned tomatoes and water before bringing to the boil. Then mix in the Puréety Sausage casserole seasoning
- Add the sausages to the sauce and place in the oven with a lid on for 1 hour (stirring halfway through)
- Take the casserole out of the oven, add the peppers and cherry tomatoes, cover and cook for a further 30 mins
- Once the sweet potato is soft, remove from the oven and mix in the fresh basil. Serve with some crusty bread and green vegetables and enjoy!

- 8-12 GF Sausages
- 2tbsp Olive Oil
- 2 Mixed Peppers , Diced - chunky
- 220g Cherry Tomatoes , Quartered
- 300g Sweet Potato , Diced - chunky
- 1 Head Fennel , Diced - 1cm
- 400g Chopped Tomatoes
- 400ml Water
- 10g Fresh Basil , Sliced - finely
- 1 Red Onion , Diced - chunky
